Spicy Roasted Cauliflower Tacos

Ingredients:

  • 1 large head of cauliflower, cut into bite-sized florets
  • 2 tbsp olive oil
  • 1 ½ tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp cayenne pepper (adjust for desired heat)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • Juice of 1 lime

For the Creamy Avocado Lime Sauce:

  • 1 ripe avocado
  • ¼ cup plant-based yogurt or vegan sour cream
  • Juice of 1 lime
  • 1 garlic clove
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Water to thin, if needed

Taco Assembly:

  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage or coleslaw mix
  • 1 small red onion, thinly sliced
  • Fresh cilantro, chopped
  • Lime wedges, for serving
  • Optional toppings: jalapeño slices, pickled onions, hot sauce

Instructions:

  1. Prepare the Cauliflower:
    Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper.
  2. Season the Cauliflower:
    In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, chili powder, cayenne, garlic powder, onion powder, salt, and pepper. Squeeze fresh lime juice over the top and mix well to coat evenly.
  3. Roast the Cauliflower:
    Spread the seasoned cauliflower on the prepared baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway through, until the edges are crispy and golden brown.
  4. Make the Avocado Lime Sauce:
    While the cauliflower is roasting, combine the avocado, plant-based yogurt, lime juice, garlic, olive oil, salt, and pepper in a blender or food processor. Blend until smooth and creamy. Add water as needed to reach your desired consistency.
  5. Warm the Tortillas:
    Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and warm in the oven for 5 minutes.
  6. Assemble the Tacos:
    Fill each tortilla with a generous spoonful of spicy roasted cauliflower. Top with shredded cabbage, red onion, and fresh cilantro. Drizzle with the creamy avocado lime sauce and add any additional toppings like jalapeños or pickled onions.
  7. Serve:
    Serve immediately with lime wedges on the side for an extra burst of flavor.

Tips:

  • For extra crunch, add roasted chickpeas or toasted pepitas.
  • Swap the cauliflower with broccoli or sweet potatoes for a fun variation.
  • Pair with a refreshing mango salsa or pineapple pico de gallo for a sweet-spicy combo!
